How can I track all tasks I follow?

If you are a follower on tasks, you will not receive in-app and email notifications about their completion. 
In order to track the completed tasks you follow, use the task management dashboard, more precisely - the Following tab in the main view. Here you can select to view only completed tasks by checking off the box on the upper right-hand side.
